Btw this was the message I received, just wanted to share for you guys as well: However, I do need to share my disappointment with the catering. Unfortunately, the food did not meet the expectations. The chicken was undercooked, and the presentation of everything was poor with no labels to identify the dishes. The sushi station was especially bad – I was so disappointed that I didn't even want to take pictures of it. Overall, the food didn’t match what was described in the invoice. It felt very disorganized, and honestly, it was embarrassing for me.

That’s incredible. She smiled the whole time, thanked us and her assistant told us we were amazing. The invoice called for 45 minutes of passed apps and we served for 2.5 hours because she didn’t want the buffet opened until 2:30 pm. I brought 2 extra apps that weren’t on the menu as a courtesy so we were able to do that. I brought 20 full rolls and set them up on multi level acrylic stands that I use at weddings at vizcaya but she didn’t like them so she asked me to set them on simple platters.

I know there were 2-3 people with undercooked chicken whom we offered a new plate. It happens sometimes due to oven disproportional cooking with large quantities but overall the guests kept coming back for extra servings. They loved the food. I swear I’m going to start taking videos of people thanking us. Miami people are so dishonest
